These pictures are of the mosque in Xi'an. In the first picture you can tell there is a lot of Chinese architectural influence in this Muslim site; the second picture is just outside the actual prayer room where tourists were not allowed.

So I wonder, is the "freedom" that Chinese Muslims have to worship sort of like the "freedom" that Chinese Christians have? Is there a Muslim church of the Three-Self or something along those lines?

Beth, the "freedom" is about the same. I was told that in Xinjiang (the western province of China), there is a system of approval for the mosques as well - all of the mullahs must be sanctioned by the Chinese government. Presumably that would be the case for Xi'an, even though mosques are not as numerous as in Xinjiang, where Islam is a more majority faith.
